The Winery
We use modern, hygienic winemaking methods whilst working
closely with a local oenologist to ensure that we retain
a sense of regionality.
The individual parcels of our vineyard are vinified
separately. This enables us to create the best possible
blend for the finished product.
The
winery is fully-equipped and we are able to carry out
the entire vinification process on site. Our stainless
steel, resin and cement tanks have a combined capacity
of 1,500 hectolitres (hl). Average annual production
is 375 hl or 50,000 bottles. We plan to increase the
proportion of stainless steel tanks and to introduce
oak barriques.
In 2006 we completely replaced the winery roof in order
to achieve a constant, cool temperature for the wine
in tank.
